EASY DIY Cannabis Infused Ginger Bread Cookie Recipe

Ingredients

  • 2/3 cup cannabutter, room temperature

  • 3/4 cup brown sugar

  • 2/3 cup unsulphured molasses

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cloves

  • 1 tablespoon cinnamon

  • 1 teaspoon allspice

  • 1 tablespoon ground ginger

  • 3 1/2 cup flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

Directions

  • Using a stand mixer or hand held mixer add the cannabutter to a large bowl. Beat for 1 minute, or until the butter is smooth and creamy.
  • Add the brown sugar and molasses and beat until combined and the mixture is creamy.
  • Add in the egg, and vanilla, beat for 2 minutes.
  • In a separate bowl whisk together the flour, baking soda, salt, ginger, cinnamon, cloves and allspice.
  • Using the mixer slowly add the dry ingredients into the wet ingredients, mixing well. The dough will become thick, and sticky.
  • Divide the dough in half, and place the dough on plastic wrap. Tightly wrap the dough so it is totally covered in plastic wrap. Pat the dough down to create a disc shape. Chill for a minimum of 4 hours.
  • Preheat oven to 350 degrees. Line 2 large baking sheets,
  • Remove dough from the refrigerator. Flour your hands and work surface. Roll the dough until it is about 1/4 inch thick.
  • Use cookie cutters to cut the dough into shapes. Place the cut shapes onto the lined baking sheet 1 inch apart. Reroll the dough scrapes until dough is reshaped, then continue the same process until all the dough has been used.
  • Bake cookies for 8-11 minutes. Let the cookies cool for 5 minutes on the baking sheet, then transfer to a cooling rack.
  • Decorate with icing or any other festive items you have, Enjoy!
