To make them even more irresistible, consider adding walnuts. Ingredients 1 cup sugar3/8 cup coconut oil (melted)2 Tbsp infused coconut oil (melted)2 eggs1 cup flour1/4 tsp salt1/2 tsp baking soda1/2 tsp baking powder 1/2 tsp cinnamon1 cup grated carrots Directions Grease the wells of a muffin tin. Preheat oven to 350°F.In a large bowl, mix sugar, melted coconut oil, melted infused coconut oil, and eggs.In a medium bowl, whisk flour, salt, baking soda, baking powder, and cinnamon.Slowly incorporate dry ingredients into wet ingredients.Fold in grated carrots.Scoop batter into muffin tin (wells should be 2/3 to 3/4 full).Bake until edges are golden and toothpick comes out cleanly.
