FAKE BAKE CARROT CAKE MUFFINS

minutesThese tasty muffins will satisfy your sweet tooth while delivering the nutrition of a cup of carrots. To make them even more irresistible, consider adding walnuts.
Ingredients
1 cup sugar
3/8 cup coconut oil (melted)
2 Tbsp infused coconut oil (melted)
2 eggs
1 cup flour
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1 cup grated carrots
Directions
- Grease the wells of a muffin tin. Preheat oven to 350°F.
- In a large bowl, mix sugar, melted coconut oil, melted infused coconut oil, and eggs.
- In a medium bowl, whisk flour, salt, baking soda, baking powder, and cinnamon.
- Slowly incorporate dry ingredients into wet ingredients.
- Fold in grated carrots.
- Scoop batter into muffin tin (wells should be 2/3 to 3/4 full).
- Bake until edges are golden and toothpick comes out cleanly.
