These tasty muffins will satisfy your sweet tooth while delivering the nutrition of a cup of carrots. To make them even more irresistible, consider adding walnuts.

Ingredients

  • 1 cup sugar

  • 3/8 cup coconut oil (melted)

  • 2 Tbsp infused coconut oil (melted)

  • 2 eggs

  • 1 cup flour

  • 1/4 tsp salt

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon

  • 1 cup grated carrots

Directions

  • Grease the wells of a muffin tin. Preheat oven to 350°F.
  • In a large bowl, mix sugar, melted coconut oil, melted infused coconut oil, and eggs.
  • In a medium bowl, whisk flour, salt, baking soda, baking powder, and cinnamon.
  • Slowly incorporate dry ingredients into wet ingredients.
  • Fold in grated carrots.
  • Scoop batter into muffin tin (wells should be 2/3 to 3/4 full).
  • Bake until edges are golden and toothpick comes out cleanly.
